At Valley Brewing our main goal as a tourist destination brewery is to create unique and interesting flavours. Here’s how we accomplish it.
Water – we use a reverse osmosis water system to remove mineral content and give us pure water to base all of our recipes from. We then add minerals back to the water during the mashing process, which makes up our “water profile”, which is different for every single beer we that brew. This gives us the ability to brew styles, “true-to-style”. One of our main focuses is on lager beer, we feel being able to create a soft water profile for these beers is crucial in brewing them properly.
Malt – we use largely Alberta grown and malted barley, as well as a fair amount of white wheat and oat malts.
Deleted: Hops – we use a fairly small variety of hops here but we look to Australia and New Zealand for inspiration for our Namesake Hazy IPA profile.
Yeast – we use a vast amount of strains from an exclusive provider of dry yeasts. The diverse styles we are able to create with their products makes this a no-brainer and enables us to brew many styles and provide different many flavours.
Equipment – we are one of very few breweries in the province who use a horizontal lager tank for conditioning (not shown in this picture though!). The use of this horizontal tank allows us to clear our lager beer without the use of fining agents or filtration. Our brewhouse capacity is 1500L and all of the fermenters and brite tanks hold 3000L of delicious craft beer.
