The challenges of spearfishing or climbing for wild fruit in the Bahamas, launching a new-age restaurant, helping cooperative buying groups, or working in community farms in the 1980’s Annapolis valley, today he pushes for sustainable and organic local food security. Now in his birth province of Quebec he develops, sources local ingredients and manufactures for over 30 Canadian Food Artisans bringing over 150 unique products to market. Those products use local supplies first.
